Danico’s New Xplorer Menu Celebrates Peru’s Rich Heritage

Danico in Paris has launched its fifth Xplorer menu inspired by Peru, featuring twelve original cocktails that celebrate the nation’s culture. Owner Nico de Soto, influenced by his experiences, collaborates with bar manager Coco Gaudin to create drinks that incorporate indigenous ingredients and flavors. The initiative highlights Peru’s diverse heritage while expanding de Soto’s brand with the US launch of his pandan liqueur, Kota.

Danico, a notable bar based in Paris, has unveiled the latest edition of its Xplorer series, themed around Peru’s rich culture and heritage. This series, initiated in 2023, introduces new menus biannually, each inspired by various global regions, including a previous edition focused on Japan, reflecting the travels of owner Nico de Soto.

Nico de Soto, who first visited Peru in 2007, utilized the country’s diverse landscapes and rich cultural heritage as the foundation for the menu. He crafted a narrative that encompasses the blend of indigenous traditions, colonial influences, and contemporary flavors, emphasizing local ingredients in the cocktails.

Together with bar manager Coco Gaudin, they created twelve unique cocktails for this menu. Notable creations include Titicaca, which utilizes Rémy Martin VSOP Cognac alongside pumpkin seeds and various spices. Chicha Morada is a twist on a traditional Peruvian drink, incorporating Grey Goose Vodka and rectified apple juice. Additionally, Leche de Tigre features Citadelle Gin and ceviche distillate, while Tupánanchiskama combines tonka-infused Bacardí 8 rum with other intriguing ingredients.

In addition to the Peruvian-inspired drinks, earlier this month, de Soto launched Kota, his pandan liqueur, in the United States, expanding his brand’s reach.

The fifth edition of the Xplorer menu at Danico celebrates Peru’s vibrant culture through innovative cocktails. This initiative showcases the rich ingredients and traditions of Peru while maintaining the ethos of global culinary exploration. By collaborating closely with bar manager Coco Gaudin, de Soto continues to push the boundaries of cocktail artistry, promising an enriching experience for patrons.
